  • 1 lb flank steak1 lb flank steak, thinly sliced against the grain into bite-sized pieces

Steps

  1. Get a big pot of salted water heating for the noodles.
  2. Season the steak well with salt and pepper. Heat 1 tablespoon of the oil in a large nonstick pan over medium-high and lay the steak in a single layer. Sear undisturbed for about 3 minutes, flip, and cook 2 to 3 minutes more, then move it to a plate.
  3. Cook the noodles to al dente, then drain and set aside.
  4. In the same pan, add the rest of the oil with the broccoli and the white parts of the green onions. Toss and cook about 3 minutes, until the broccoli picks up some color.
  5. Add the butter, garlic, and ginger and cook another 2 minutes, then pull the pan off the heat.
  6. Add the noodles, steak, soy sauce, sesame oil, and the green onion tops. Toss until everything is coated.
  7. Taste and add a little more soy sauce if it needs it.
  8. Serve right away, scattered with furikake and chili crisp if you like.
