Steps
- Get a big pot of salted water heating for the noodles.
- Season the steak well with salt and pepper. Heat 1 tablespoon of the oil in a large nonstick pan over medium-high and lay the steak in a single layer. Sear undisturbed for about 3 minutes, flip, and cook 2 to 3 minutes more, then move it to a plate.
- Cook the noodles to al dente, then drain and set aside.
- In the same pan, add the rest of the oil with the broccoli and the white parts of the green onions. Toss and cook about 3 minutes, until the broccoli picks up some color.
- Add the butter, garlic, and ginger and cook another 2 minutes, then pull the pan off the heat.
- Add the noodles, steak, soy sauce, sesame oil, and the green onion tops. Toss until everything is coated.
- Taste and add a little more soy sauce if it needs it.
- Serve right away, scattered with furikake and chili crisp if you like.
