Steps
- Rinse the red lentils in a strainer until the water runs clear, then set them aside.
- Heat the oil in a large pot over medium. Add the onion and cook until soft and golden, about 5 minutes.
- Add the garlic, ginger, cumin, turmeric, and chili powder. Stir for 1 minute, until fragrant.
- Stir in the tomatoes and cook 2 minutes, breaking them down with the spoon. Add the lentils, coconut milk, water, and salt.
- Bring to a boil, then drop to a low simmer. Cook uncovered 18 to 22 minutes, stirring occasionally, until the lentils break down and the dal is thick and creamy.
- Stir in the lime juice. Taste and add more salt if needed. Spoon over rice and finish with chopped cilantro.
