  • 2 cans of chickpeas, drained2 cans chickpeas, drained and rinsed
  • half an onion, chopped1/2 yellow onion, chopped

Steps

  1. Drain and rinse the chickpeas, then pat them very dry. Add them to a food processor with the onion, garlic, parsley, cilantro, cumin, coriander, salt, and pepper.
  2. Pulse to a coarse, crumbly mixture that clumps when you press it. Stop before it turns into a smooth paste. Add the flour and baking soda and pulse two or three more times.
  3. Shape into 16 small balls, then press each into a thick patty. Refrigerate for 10 minutes to firm up.
  4. Lightly coat the patties with olive oil. Air fry at 380F for 12 to 14 minutes, turning once halfway, until deeply golden and crisp.
  5. Stir the tahini, lemon juice, water, and a pinch of salt until smooth and pourable. Loosen with a little more water if needed.
  6. Fill each bowl with greens, cucumber, and tomato. Add the warm falafel and spoon the tahini sauce over the top.
