Steps
- Heat the oven to 350F and line an 8x8 inch pan with parchment, leaving an overhang on two sides.
- Make the crust: stir the melted butter, flour, powdered sugar, and salt until it forms a soft crumbly dough. Press it firmly and evenly into the bottom of the pan.
- Bake the crust for 18 to 20 minutes, until the edges turn pale gold. Leave the oven on.
- While it bakes, whisk the eggs, granulated sugar, lemon juice, lemon zest, and flour until smooth.
- Pour the filling over the hot crust and bake 20 to 22 minutes, until the center is just set and no longer jiggly.
- Cool fully in the pan, then chill at least 1 hour so the bars firm up before slicing.
- Lift out by the parchment, dust with powdered sugar, and cut into 16 squares.
