- In a large bowl, stir together the oats, chia seeds, and a pinch of salt.
- Add the peanut butter, honey, and vanilla. Stir until the mixture is evenly moistened and holds together when pressed.
- Fold in the chocolate chips.
- If the mixture is too soft to roll, chill it in the fridge for 10 to 15 minutes to firm up.
- Scoop about a tablespoon at a time and roll into balls between your palms. You should get around 12.
- Store in an airtight container in the fridge for up to a week, or freeze for up to 3 months.
