Steps

  1. In a large bowl, stir together the oats, chia seeds, and a pinch of salt.
  2. Add the peanut butter, honey, and vanilla. Stir until the mixture is evenly moistened and holds together when pressed.
  3. Fold in the chocolate chips.
  4. If the mixture is too soft to roll, chill it in the fridge for 10 to 15 minutes to firm up.
  5. Scoop about a tablespoon at a time and roll into balls between your palms. You should get around 12.
  6. Store in an airtight container in the fridge for up to a week, or freeze for up to 3 months.
