Steps
- Stir together the soy sauce, water, sesame oil, brown sugar, rice vinegar, ginger, garlic, the 1/2 tbsp cornstarch, and sesame seeds in a small bowl. Set it aside.
- In another bowl, beat the egg with the 2 tbsp cornstarch and a little salt and pepper. Cut the chicken into 1-inch pieces and toss to coat.
- Heat the oil in a large skillet over medium until very hot, then swirl to coat the pan. Lay the chicken out in a single layer.
- Let it cook undisturbed until golden underneath, then flip and break it into smaller clumps. Cook until golden all over, stirring as little as you can so the coating stays on.
- Pour the sauce over the chicken and toss. Let it come to a simmer and thicken, then turn off the heat.
- Spoon over the rice and scatter the green onions on top.
