Steps
- Stir the paprika, smoked paprika, brown sugar, garlic powder, onion powder, salt, and pepper together in a small bowl.
- Cut the pork into big chunks. If it has a bone, pull it now or leave it and lift it out after shredding (bone-in runs longer).
- Toss the pork in the spice rub until every piece is coated.
- Scatter the onion across the bottom of the slow cooker, set the pork on top, and pile on the garlic.
- Cover and cook on high for about 4 hours or low for about 8, until a fork twists the meat apart easily. Give it another hour if it resists.
- Shred the tender pork with two forks.
- Want crispy edges? Spread some on a sheet pan and broil a few minutes until browned — watch it closely.
- Pile it onto sandwiches, into tacos, or over a bowl of rice.
