Steps

  1. Brown the sausage in a large deep skillet over medium heat, breaking it up as it cooks. Pour off extra fat.
  2. Add the onion, bell peppers, and garlic and cook until they soften, about 5 minutes.
  3. Stir in the rice, Italian seasoning, and smoked paprika and let it toast for a minute.
  4. Pour in the broth, diced tomatoes with their juice, and tomato sauce, scraping up anything stuck to the pan.
  5. Bring to a boil, then cover and simmer on low until the rice is tender and the liquid is mostly gone, about 20 minutes.
  6. Off the heat, scatter the cheese on top, cover, and let it melt for a couple minutes.
  7. Top with parsley and serve hot.
